#WFD – Baked Potatoes with an Avo and Bacon Topping

POLOKWANE – Avocado is one of the most popular food items to cook with or eat these days.

What’s for Dinner says this hearty baked potato stuffed with bacon, chopped chives and avocados is a perfect starter or side for your dinner recipes.


  1. 4 potatoes
  2. 225g packet shoulder bacon , cooked till crispy
  3. 1 ripe avocado, halved, peeled and stone removed
  4. 30ml sour cream
  5. 1 x KNORR Creamy Garlic Sauce
  6. 30ml chives, chopped


  1. Wash potatoes and dry with paper towel.
  2. Using a fork, pierce each potato a few times.
  3. Cook potatoes for 5-6 minutes on HIGH (100%) power in the microwave.
  4. Turn potatoes over.
  5. Cook a further 5-6 minutes on HIGH (100%) power or until potatoes are cooked.
  6. Stand for 7 to 10 minutes.
  7. Mash avocado with sour cream and contents of the sachet of KNORR Creamy Garlic Sauce.
  8. Add bacon and chives and mix well.
  9. Cut a cross in each potato and squeeze the sides in gently.
  10. Spoon avocado mixture onto potatoes and serve.

BETTER FOR YOU TIPS : Leaving the skin on the potatoes provides you with extra fibre and retains the goodness of the potatoes. You can also buy a reduced fat bacon option to provide a lighter twist to this delicious dish!
